Depends on the operating system your server runs and also how powerful the server is to cope with partitioning (RAM/CPU etc) also whether you have remote or local access to your server. VMware and Virtualbox (free) are good, as is Microsofts own virtual machine platform. Virtualbox also has its own RDP server you can use to connect (you need to download some additional tools from the Oracle/Virtualbox website). Once you have created a VM just boot it from the iso (DVD or iso file)
