It opens when your broker opens. Open MetaTrader, go to specifications page for XAUUSD or other pair you're using.
My broker opens trading Monday 1AM, which is few hours after forex pairs open.

Yes, I noticed that. I thought that because of the Martin Luther King day the USD pairs would be closed

XAUUSD is already opened in my broker and I did have some trades. Maybe your broker is closed for that pair, you have to check that.
